Sabudhana Upma
Ingredients:
cumin seeds - 2 tsp
curry leaves - 1 stem
urad dal - 1/2 tsp
green chilies - 4
Mustard seeds - 1/2 tsp
oil - 1 tbsp
Onions - 1 (long thin slices)
Peanuts powder - 1/2 cup
sago (tapioca) - 2 cups
coriander leaves - 1/2 bunch
Coconut powder - 2tbsp (optional)
lemon juice - 2 tsp (optional)
salt to taste
Recipe:
1) Soak sago in water for 2-3 hrs . Drain the water and keep it aside.
2) dry roast peanuts and grind it into a rough powder .
3) In pan add oil, murstard seeds, cumin seeds, urad dal, onions salt, turmuric, chopped green chillies, curry leaves, mix well.
4) Add sago and cook for 5-7mins. Add crushed peanuts + coconut powder (optional) and cook with closed lid for 5min.
5) garnish with coriander and lemon juice (optional).
Malai Kofta
Ingredients:
cashews - 20 grams
paneer grated -1 cup
grated boiled potato - 1 cup
grated mix vegetable - 1 cup
oil - 2 tbsp
onions - 2 medium
ginger garlic paste - 1 tbsp
shahi jeera - 1tsp
salt - to taste
turmeric - 1 pinch
tomato - 2 medium/small
red chilli pdr - tsp
chopped chilli - 2 piece
coriander chopped - 1/4 bunch
coriander powder - 2tbsp
cumin pdr - 1 tbsp
garam masala - 1/2 tbsp (optional)
cream - 1/2 cup
For Koftas
1)Mash the potatoes, boiled mixed vegetables(drain all water), paneer, nuts and mix together. Add the chilli powder, coriander powder, salt and mix well. The resulting dough should be firm. If not add some bread crumbs.
2)Make this dough into balls
3)Coat it with some cornflour or allpurpose flour ·
4)Deep fry these rounds till pale golden in colour. ·
For the gravy:
1)Take oil in a deep pan,add onions+salt+10 cashews and fry the onions till light brown. Add ginger-garlic paste & fry. Add tomatoes, coriander powder and red chilli powder and cook until tomatoes loose the rawness and Grind into a paste.
2)In the same pan, take some more oil, add black cumin and add the above paste and fry till the oil begins to separate from the gravy.
3)Add 1 cup water to this masala to form a gravy and mix well.
4) Bring the sauce/gravy to a boil and then simmer.
5)Add cream , If you don’t have cream, add little milk and mix fast with out curdling and add finely grated paneer that will give good creamy texture. Gently add the kofas to this sauce/gravy and stop cooking .
6)Turn off the stove and garnish with chopped coriander and grated paneer.
Masala Buttermilk
Pineapple Cake
Quickie:
1) Buy pineapple cake mix (at walmart) :) and Mix it with 3 eggs, oil & water.
2) Grease baking pan with oil. Arrange pineapple chunks or rounds slices. Spread a layer of 'Dark Brown Sugar'.
3) Pour the cake mix on top of the sugar layer and bake it for 40mins at 350 F. (Insert a knife and you will notice that it will come out clean - this shows it has baked properly)
4) Let the cake cool down and reverse it.
5) Serve with whip cream.
